Corn flour, since it is low in gluten, does not allow the dough to rise. However, it is richer, weight for weight, than whole wheat flour!
Use a cup for dry ingredients (not for liquid ingredients) to measure you flour and then use a knife to level the flour across the measuring cup. Avoid scooping a measuring cup into the flour bag or shaking it because you might add 30 additional grams of flour per cup!
