Highest plant source of omega-3, chia seeds are also rich in fibers, proteins and antioxidants. Added to liquid, its texture changes to become gelatinous and soft.

Replace eggs by chia seeds in your pastries (1 tablespoon = 1 egg): let rest 1 tbsp chia seeds in 3 tbsp water for 30 minutes to obtain an egg-similar consistency.
