Sumac

From the Middle East, sumac is a spice that gives a fruity flavor to grilled meats, fish and marinades. With its slightly acid lemony taste, it can replace lemon or lemon verbena in many recipes.

Avoid overcooking sumac because because it will lose its acidity.
